做法:春笋(sǔn )切(qiē )成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切(qiē )成段。锅(guō )烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩住春(chūn )笋,盖(gài )上(shàng )锅盖大(dà )火煮开后转中火。煮到水(shuǐ )快熬干(gàn )的时候(hòu )加入盐,翻(fān )炒均匀稍收汁时盖上锅盖(gài )焖。
