做法:洗净宰好鲫(jì )鱼,洗净(jìng )淮山和薏米。用(yòng )清水(shuǐ )把陈皮泡软,拍裂一小(xiǎo )块姜,热锅(guō ),用姜块在锅(guō )上擦一遍,放两勺(sháo )油(yóu ),待油六成热下鱼(yú ),煎至微黄(huáng )。煮沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其(qí )他材料(liào ),武火煮沸,转中(zhōng )小火煲一(yī )个半小时,下盐调味即可品尝。
