做法:春笋(sǔn )切成片后加少许盐捞出后用清水浸泡(pào ),生姜切片(piàn ),葱切成(chéng )段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩(yǎn )住春笋,盖(gài )上锅盖大(dà )火(huǒ )煮开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时(shí )盖上锅盖(gài )焖。
