做法(fǎ ):春笋切(qiē )成片后加少许盐(yán )捞出后用清水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅(guō )烧热,倒(dǎo )入2勺油,放入(rù )生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入(rù )生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅盖大火煮(zhǔ )开(kāi )后(hòu )转中火(huǒ )。煮到(dào )水快熬干的时(shí )候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
