做法:洗净宰好鲫鱼,洗净(jìng )淮山和薏米。用清水把陈(chén )皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在(zài )锅上擦一(yī )遍,放两(liǎng )勺油(yóu ),待油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼(yú )和其他材料(liào ),武火煮(zhǔ )沸,转中(zhōng )小火(huǒ )煲(bāo )一个半小(xiǎo )时(shí ),下盐调味即可(kě )品尝。
