做法:洗净(jìng )宰好鲫鱼,洗净淮山和薏(yì )米。用清水(shuǐ )把陈皮(pí )泡软,拍裂一(yī )小块姜,热(rè )锅,用姜块在锅上(shàng )擦一遍,放两勺油,待油(yóu )六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清(qīng )水,放(fàng )入煎煮好的鲫(jì )鱼和其他(tā )材料,武火煮沸,转中(zhōng )小火煲一个半小(xiǎo )时,下盐调味即可品尝。
