做法:春笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热(rè ),倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒(chǎo )1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量清水半掩(yǎn )住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁(zhī )时盖上锅盖焖(mèn )。
