做(zuò )法:洗(xǐ )净宰好鲫鱼,洗净淮(huái )山和薏米(mǐ )。用清水把陈皮泡软,拍(pāi )裂(liè )一小块姜,热锅,用(yòng )姜块在锅上擦一(yī )遍,放两勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫(jì )鱼和其(qí )他材料,武火煮沸,转(zhuǎn )中小火煲(bāo )一个半(bàn )小时,下盐调味即(jí )可(kě )品尝。
