做法:洗净宰好鲫鱼,洗(xǐ )净淮山和薏米。用(yòng )清水把陈皮泡软,拍裂一小(xiǎo )块姜,热(rè )锅(guō ),用姜块在锅上擦一(yī )遍,放两(liǎng )勺油,待油六成热(rè )下鱼,煎至微黄。煮沸瓦煲(bāo )里(lǐ )的清水,放入煎煮(zhǔ )好的鲫鱼和其(qí )他材料,武(wǔ )火煮(zhǔ )沸,转中小火煲一个半小(xiǎo )时,下盐调味即可品(pǐn )尝(cháng )。
