做法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏米。用清(qīng )水把陈皮泡软,拍裂一小(xiǎo )块姜,热锅,用姜块在锅上擦一遍,放两勺油,待(dài )油六成热下鱼,煎至(zhì )微(wēi )黄(huáng )。煮(zhǔ )沸瓦煲(bāo )里的清水,放入(rù )煎煮(zhǔ )好的鲫鱼和其(qí )他材料,武火煮(zhǔ )沸,转中小火煲一个半(bàn )小(xiǎo )时(shí ),下盐调味即可品尝。
