做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把(bǎ )陈(chén )皮(pí )泡软,拍裂一(yī )小块姜,热(rè )锅,用姜块在锅(guō )上擦一遍,放两勺(sháo )油,待油六成热(rè )下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水,放入煎煮(zhǔ )好的(de )鲫鱼和其他材(cái )料,武火煮沸,转中(zhōng )小火煲(bāo )一个半小(xiǎo )时,下盐调味即(jí )可品尝。
