做(zuò )法:春(chūn )笋切成片(piàn )后(hòu )加少许盐(yán )捞出后用清(qīng )水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻(fān )炒均匀稍(shāo )收汁时盖上(shàng )锅盖焖。
