做法:洗净宰好鲫鱼,洗(xǐ )净淮山和薏米。用清(qīng )水把(bǎ )陈皮泡软,拍裂一(yī )小块姜,热(rè )锅,用姜(jiāng )块在锅上擦一遍,放两勺油,待油六(liù )成热下鱼,煎至(zhì )微黄(huáng )。煮沸瓦煲里的清水(shuǐ ),放(fàng )入煎煮好的鲫鱼和其(qí )他材料,武火煮(zhǔ )沸,转中小火煲一个半(bàn )小时,下盐调味(wèi )即可品尝。
