做法(fǎ ):春笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量清水半掩(yǎn )住春(chūn )笋,盖上锅(guō )盖大火煮开(kāi )后(hòu )转中火。煮到水快熬干(gàn )的时候加入盐,翻(fān )炒(chǎo )均匀稍收汁(zhī )时盖上锅(guō )盖焖。
