做法:春笋(sǔn )切成片后(hòu )加少许(xǔ )盐(yán )捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住(zhù )春(chūn )笋,盖上锅盖(gài )大火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时(shí )候(hòu )加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
