做法(fǎ ):洗(xǐ )净宰好鲫鱼,洗净淮(huái )山(shān )和薏米。用清水把(bǎ )陈皮(pí )泡软,拍裂一小块姜,热锅,用姜(jiāng )块在锅(guō )上擦一(yī )遍,放两勺油,待油六成(chéng )热(rè )下鱼,煎至微黄。煮(zhǔ )沸瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼和其他材(cái )料,武火(huǒ )煮沸,转中(zhōng )小火煲一个半小(xiǎo )时,下盐调味即可品尝(cháng )。
