做法:春笋切(qiē )成片后加少许盐捞出后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加(jiā )入生抽(chōu )、老抽(chōu )、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清水半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到(dào )水(shuǐ )快熬干的时(shí )候加(jiā )入盐,翻(fān )炒均匀稍收(shōu )汁时盖上锅(guō )盖焖(mèn )。
