做法:春笋切(qiē )成片后(hòu )加少(shǎo )许盐捞出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅(guō )烧热,倒入2勺油(yóu ),放(fàng )入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅(guō )盖(gài )焖。
