做法(fǎ ):春笋切(qiē )成片后加少许(xǔ )盐捞出(chū )后用(yòng )清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入少量清水半掩住春(chūn )笋,盖上锅(guō )盖(gài )大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐(yán ),翻炒均匀稍收汁(zhī )时盖上锅(guō )盖焖。
