做法:春(chūn )笋切成(chéng )片后加少许盐(yán )捞(lāo )出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再(zài )加入生抽(chōu )、老抽、蚝油(yóu )翻炒(chǎo )均匀,加入(rù )少量清水半掩住春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加(jiā )入盐,翻炒(chǎo )均匀稍(shāo )收汁时盖(gài )上锅盖焖。
