做法:春笋切成片后加少许盐捞出后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油(yóu ),放(fàng )入生(shēng )姜、春(chūn )笋(sǔn )、牛(niú )肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住(zhù )春笋,盖上(shàng )锅(guō )盖大火煮开后转中火(huǒ )。煮到水快熬干的时候(hòu )加(jiā )入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
