做法:春笋切(qiē )成片后加少许(xǔ )盐捞出后用清水浸泡(pào ),生姜切片(piàn ),葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻(fān )炒1分钟左右。再(zài )加入(rù )生抽、老抽、蚝(háo )油翻(fān )炒(chǎo )均匀,加入少量清(qīng )水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到(dào )水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
