做法:洗净(jìng )宰(zǎi )好鲫鱼(yú ),洗净淮山和薏米。用清水(shuǐ )把陈皮泡软,拍裂一小块(kuài )姜,热锅(guō ),用(yòng )姜(jiāng )块在锅上擦一遍(biàn ),放两(liǎng )勺油(yóu ),待油六成热下鱼,煎至微(wēi )黄。煮沸瓦(wǎ )煲里的清水(shuǐ ),放入煎煮好(hǎo )的鲫鱼和其他材料,武火煮沸,转中小火煲一个半小时,下(xià )盐调味即可品尝。
