做法:洗净宰好(hǎo )鲫(jì )鱼,洗(xǐ )净淮山和薏米。用清水把陈皮泡软,拍(pāi )裂一(yī )小块姜,热锅,用姜块在锅上(shàng )擦一遍,放(fàng )两(liǎng )勺油,待油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清(qīng )水,放入煎煮好的鲫鱼和(hé )其他材料,武火(huǒ )煮(zhǔ )沸,转中小火(huǒ )煲一个半小时(shí ),下盐调(diào )味即可品尝。
