做法:春笋切成片后加少许盐捞出(chū )后用清水浸(jìn )泡,生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入少量清水半掩住(zhù )春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干的时候加入盐(yán ),翻(fān )炒均(jun1 )匀稍收汁时(shí )盖上(shàng )锅(guō )盖(gài )焖。
