做法:春笋切(qiē )成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切(qiē )成(chéng )段(duàn )。锅(guō )烧热,倒入2勺油,放(fàng )入生(shēng )姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春(chūn )笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬(áo )干的时(shí )候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
