做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍裂(liè )一小块(kuài )姜,热锅,用(yòng )姜块在锅上(shàng )擦一遍,放(fàng )两勺油,待油六成热(rè )下鱼,煎(jiān )至(zhì )微(wēi )黄。煮沸瓦(wǎ )煲里的清水,放入煎煮好(hǎo )的鲫鱼和(hé )其(qí )他材(cái )料,武火煮沸,转中小火煲一个(gè )半小时,下盐调味即可品(pǐn )尝。
