做法:春笋切成(chéng )片后加少(shǎo )许盐捞出后用(yòng )清(qīng )水浸(jìn )泡,生姜切片,葱(cōng )切(qiē )成段。锅烧热(rè ),倒入2勺油,放入生(shēng )姜、春(chūn )笋、牛(niú )肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮(zhǔ )开后转中火(huǒ )。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅盖焖(mèn )。
