做法:洗净宰好鲫鱼,洗净淮山和薏米(mǐ )。用清水(shuǐ )把陈皮泡软,拍裂一(yī )小块姜,热锅(guō ),用姜块在(zài )锅上(shàng )擦一遍,放两(liǎng )勺油,待油六成热(rè )下鱼,煎(jiān )至微黄。煮沸瓦(wǎ )煲里的清(qīng )水,放入煎煮好(hǎo )的鲫鱼和(hé )其他材料,武火煮沸,转中小火煲一个半(bàn )小时(shí ),下盐(yán )调味即可品尝。
