做法:洗(xǐ )净宰好鲫(jì )鱼,洗净淮山和薏(yì )米。用清水把陈(chén )皮(pí )泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅(guō )上擦一(yī )遍,放两(liǎng )勺油,待油六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水,放(fàng )入煎煮好的鲫鱼(yú )和其(qí )他材料,武火煮(zhǔ )沸,转中小火(huǒ )煲一(yī )个半小时,下盐调味(wèi )即可品尝。
