做法:春笋切(qiē )成片后加少许盐捞出后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生(shēng )姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再(zài )加入(rù )生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水半掩(yǎn )住(zhù )春笋(sǔn ),盖上锅盖大火(huǒ )煮开后转中火。煮到水(shuǐ )快熬(áo )干的时候加入盐,翻炒均匀(yún )稍(shāo )收汁时盖上(shàng )锅盖焖。
