做法:春(chūn )笋切(qiē )成片后加少许盐捞出后用清水浸泡(pào ),生(shēng )姜切片,葱切成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后转中火(huǒ )。煮到水(shuǐ )快熬干的(de )时候加入盐,翻(fān )炒均匀稍(shāo )收汁时盖上锅(guō )盖焖。
