做法:春笋切成片后加少许盐捞出后用清水浸(jìn )泡,生姜(jiāng )切片(piàn ),葱切成段(duàn )。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜(jiāng )、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮(zhǔ )到水快熬(áo )干的时候加入(rù )盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
