做法:春笋(sǔn )切成片后加少许盐(yán )捞出后用清水浸泡,生姜切(qiē )片,葱切(qiē )成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加(jiā )入生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均(jun1 )匀稍(shāo )收汁时盖上(shàng )锅(guō )盖焖。
