做(zuò )法:洗(xǐ )净(jìng )宰好鲫鱼,洗净(jìng )淮山和薏米。用清水把陈皮泡(pào )软,拍裂一小块姜(jiāng ),热锅(guō ),用姜(jiāng )块在锅上擦一遍,放两勺油,待油六成热下鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其他材料(liào ),武火煮(zhǔ )沸,转中小(xiǎo )火煲一(yī )个半(bàn )小时,下(xià )盐调味即可品尝。
