做法:洗净(jìng )宰好(hǎo )鲫鱼,洗(xǐ )净淮山和薏米。用清(qīng )水把陈皮泡软,拍裂(liè )一小块姜,热锅,用(yòng )姜块在锅(guō )上擦一遍,放两(liǎng )勺油(yóu ),待油(yóu )六(liù )成热下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和(hé )其他材(cái )料,武火煮(zhǔ )沸,转(zhuǎn )中小火(huǒ )煲一个半小(xiǎo )时,下盐调味即可品尝。
