做(zuò )法:洗净宰好鲫(jì )鱼,洗净淮山和薏米。用清水把陈皮泡软,拍裂一小块(kuài )姜,热锅(guō ),用姜块(kuài )在锅上(shàng )擦一遍(biàn ),放两勺油,待(dài )油六成热(rè )下鱼,煎至微黄。煮沸瓦煲(bāo )里的清水(shuǐ ),放入煎煮好的鲫(jì )鱼和其他材(cái )料,武火煮沸,转中小(xiǎo )火煲一个半(bàn )小时,下盐(yán )调味即可品尝。
