做(zuò )法:洗净宰好鲫鱼,洗净淮山和薏(yì )米。用清水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅(guō ),用姜(jiāng )块在锅(guō )上擦一遍,放两勺油,待油六成热(rè )下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼(yú )和其他材料,武火煮(zhǔ )沸,转中小火煲(bāo )一个(gè )半小(xiǎo )时,下盐调味(wèi )即可品(pǐn )尝。
