做法:洗净宰好鲫鱼,洗净(jìng )淮山和薏米(mǐ )。用清水(shuǐ )把(bǎ )陈皮泡软(ruǎn ),拍裂一(yī )小块姜,热锅,用(yòng )姜块(kuài )在锅上擦一(yī )遍(biàn ),放两勺油(yóu ),待油(yóu )六(liù )成热(rè )下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其他材料,武火煮沸,转中小(xiǎo )火煲一(yī )个(gè )半(bàn )小时,下盐调味即可品尝。
