做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把(bǎ )陈皮泡软,拍裂(liè )一小(xiǎo )块姜,热锅,用姜块在锅上擦一遍(biàn ),放两勺油,待油六(liù )成(chéng )热下鱼,煎至(zhì )微(wēi )黄。煮沸(fèi )瓦煲里的清水(shuǐ ),放入煎煮好(hǎo )的鲫鱼和(hé )其(qí )他材料,武火煮沸,转中小火煲一个(gè )半(bàn )小时,下(xià )盐调(diào )味(wèi )即可品尝。
