做法:春笋切(qiē )成片后加(jiā )少许盐(yán )捞出后用清水浸(jìn )泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻炒(chǎo )均匀稍收汁时(shí )盖上(shàng )锅(guō )盖焖。
