做法:洗净宰好鲫(jì )鱼,洗净淮山和薏米。用清水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅,用姜块在(zài )锅上擦(cā )一遍,放两勺(sháo )油,待油六(liù )成热下鱼,煎至微黄(huáng )。煮沸瓦(wǎ )煲里的清水,放入煎(jiān )煮好的鲫(jì )鱼和其他材料,武火煮沸,转(zhuǎn )中小火(huǒ )煲一个半(bàn )小时,下(xià )盐(yán )调味即可品尝。
