做(zuò )法:春(chūn )笋切成片后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成(chéng )段(duàn )。锅烧热,倒入(rù )2勺油,放(fàng )入生姜、春笋、牛肉(ròu )片、葱段翻炒1分(fèn )钟(zhōng )左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖(gài )上锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
