做法(fǎ ):春笋切成片后加少许盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧(shāo )热,倒入(rù )2勺油,放入生姜(jiāng )、春笋(sǔn )、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加(jiā )入少量清水半掩住春笋,盖上锅盖(gài )大火煮开后(hòu )转中火。煮(zhǔ )到(dào )水快熬干的时候加入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅盖焖(mèn )。
