做法(fǎ ):洗净宰好鲫鱼,洗净淮山和(hé )薏米。用清水把陈皮泡软,拍裂(liè )一小块姜,热锅,用(yòng )姜(jiāng )块在锅上擦一遍,放(fàng )两勺油,待油六成热下(xià )鱼,煎至(zhì )微黄。煮沸瓦煲里的(de )清水,放入煎煮好的鲫(jì )鱼和其他材(cái )料(liào ),武(wǔ )火煮沸,转中小火煲一个(gè )半小(xiǎo )时,下盐调味即可品尝。
