做法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧热(rè ),倒入2勺油,放(fàng )入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大(dà )火煮开后转中火。煮(zhǔ )到水(shuǐ )快(kuài )熬干(gàn )的时候加入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上锅盖焖。
