做法(fǎ ):春笋切(qiē )成片后(hòu )加少许(xǔ )盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖上(shàng )锅盖大(dà )火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干的(de )时候加入盐,翻炒(chǎo )均匀(yún )稍收汁时(shí )盖(gài )上锅盖焖。
