做法:春笋切成片后加少许盐捞出(chū )后用清水浸(jìn )泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放(fàng )入生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒(chǎo )均匀,加(jiā )入少(shǎo )量(liàng )清水半掩住(zhù )春笋,盖(gài )上锅(guō )盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收(shōu )汁时盖上锅(guō )盖(gài )焖。
