做法:春笋切成片后加少许(xǔ )盐(yán )捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到(dào )水快熬干的时(shí )候加入盐,翻(fān )炒均匀稍收汁时盖(gài )上锅盖焖。
