做法:春(chūn )笋切(qiē )成片后加(jiā )少许盐(yán )捞(lāo )出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加(jiā )入少量清水半掩(yǎn )住春笋,盖上锅盖大(dà )火煮开后转中火。煮到水(shuǐ )快熬干(gàn )的时候加入盐(yán ),翻(fān )炒均匀稍收汁时盖(gài )上锅盖焖。
